By December, we sink into the dark days of late fall and winter, when the weather brings either frost and chill or the deceptive promise of sustained sun. The garden is toying with me… should I yank the last parsley and the tiny red lettuce or chance it a few more days? I already know it will disappoint so why am I procrastinating? The last herbs and tomatoes and peppers have been in the house for weeks and are starting to dwindle, along with the other gleanings of the fall crops. But there’s always the pantry! I’ve joined the Dark Days Challenge, a cross-country blog over the next four and a half months, which emphasizes food principles that are Sustainable, Organic, Local, and Ethical at least once a week. The dark days won’t be so dark after all. This is going to be fun.
